Oatmeal Update!
Everyone really liked the oatmeal. Even David and he doesn't like anything, usually. It baked up cake-like and was really good with the optional topping (that just doesn't seem to be optional). Here is the recipe, complete with directions (since I forgot that part).
Baked Oatmeal
1/2 cup applesauce (or veggie oil)
3/4 cup sweetener of your choice (I use maple syrup so I cut back on the amount)
2 eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
Add all and whisk.
3 cups regular oats
Stir in oats and put into greased 8x8 baking dish.
1/2 cup raisins (optional for us-we don't like raisins in our oatmeal)
Optional (I don't generally do this, but the brown sugar addition is yummy)
1-2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Top with brown sugar and cinnamon and cover. Refrigerate over night. Bake 350* 35-45 minutes (it took a good 45 for me). When it's done it will have a cake consistency.
