More Cooking Adventures
My promise to myself to start cooking more has taken on a life of it's own. I've begun to cook most every night and mostly from scratch. It's still not something I enjoy too much, but I have been doing better about having regular meals. Tomorrow for breakfast, we're even going to try something new! I'm really excited about it and I hope the kids like it, too. Here is the recipe for those who are intrigued by my post. I got it from a homeschool message board that I mostly lurk on. (And it got rave reviews there...)
Baked Oatmeal
1/2 cup applesauce (or veggie oil)
3/4 cup sweetener of your choice (I use maple syrup so I cut back on the amount)
2 eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
3 cups regular oats
1/2 cup raisins
Optional (I don't generally do this, but the brown sugar addition is yummy)
1-2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Now, before you think there is no way her kids are going to eat that!, I must tell you that for all their complaining about the food I make, they do like oatmeal. And I'm not talking about the rip open the bag and add boiling water stuff. I mean real, honest to goodness, cooked in a pot, whole oats. I think I've spoiled them by never making the quick, insanely sugary kind. They just don't like it. Sometimes I wish they did. It would be so much easier if they did. But, they don't. I am hoping that this recipe is a winner. It was super easy to assemble and should not require much more tomorrow to make it. I might even be able to pop that puppy in the oven before my first cup of coffee.
